Color monitoring and bake control system for commercial baking apparatus designed control the temperature and moisture levels in baking zones in a commercial baking oven namely, an inter-related series of computer controlled monitors and sensors used to monitor and control the baking time, gas valve position, temperature, moisture levels, and product color by feeding the collected data to a central processor that compares and correlates the current readings with pre-set bake data parameters to control and optimize the operational settings within the pre-set limits
