Grease handling system for use in commercial institutional and industrial kitchens, consisting primarily of, spray booms, nipples, spray nozzles for spraying washing solution into an exhaust flue and exhaust hood, baffle filter units and gutters for containing washing solution mixtures, sump pumps, sump boxes and pipes for collection, delivery and return of washing solution mixtures, fluid collectors and fan mount adapters for allowing introduction of washing solution mixtures, fluid collectors and fan mount adapters for allowing introduction of washing solution and accumulating grease, nozzles and brackets for flushing accumulated grease, bioremediation units for remediating washing solution entrained with grease, tanks and pumps for make-up of washing solution, holding tanks, skimmers, mixers and circulating pumps for mixing grease, control panels, communication lines, and control units for controlling the equipment
